From the Beef & Liberty team. The dough is emmer — an ancient organic grain — cut with rye and Italian flour, lower in gluten and denser in minerals. It bakes light, leopard-spotted at the rim, crisp but still with some chew. Funghi, margherita, khachapuri and tiramisu are what they are known for.
