• The home shop of Sang Roastery, out in To Kwa Wan. Its founder grew up inside the family business the name comes from, spent eight years learning to roast, and in 2020 set up as a specialty roaster proper. The green beans come from suppliers chosen for reliability and ethics, only specialty grade scoring eighty or above, and the roasting is semi-direct fire — demanding to run, but it releases the flavours evenly. The narrow shop on Staunton Street is its offshoot.
