Notes

  • In K11 MUSEA, one Michelin star, and on the radar for more than two decades. The cooking runs from Shanghai into Jiangsu and Zhejiang, balanced rather than loud — sautéed shredded mandarin fish, baked stuffed crab shell, braised beef ribs in brown sauce. The sliced pork in garlic sauce comes paper-thin, its richness held down by garlic and soy. Two floors done as 1930s Shanghai, with the harbour outside.
